Accidental Sugar-Free Banana Bread

Sugar-Free Banana Bread Recipe

So tonight, I decided to bake some banana bread, as I often do. Somehow, I forgot the sugar.

I absolutely kid you not, NOBODY noticed.  The end result was a bit less sweet than usual, but it was absolutely perfect. So if you’d rather skip all the sugar, here’s that sugar free banana bread recipe.


  • 3 ripe bananas
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • Pinch of salt


Start by mashing the bananas in a large bowl. Add the oil, egg, vanilla and stir well. Then add the flour, baking soda and salt. Pour the batter into 1 regular sized loaf pan or 2 mini loaf pans. Make sure to grease your loaf pan(s) first.

Bake in a 350 F oven for about 45 minutes for mini loaves or 50-60 minutes for a full-sized loaf. The bread is done when you insert a toothpick and it comes out clean.

    • I know! I could tell it wasn’t as sweet, so I don’t know why they didn’t notice, but it was still very good.

  2. I had a similar thing happen with a pumpkin bar recipe that I made for Thanksgiving. I actually ran out of sugar and only had enough for about a quarter of what the recipe called for. It was a hit at Thanksgiving at my mothers, even the youngest kids devoured it, go figure.

  3. Course the nutella I spread on top has sugar… ;)
