So tonight, I decided to bake some banana bread, as I often do. Somehow, I forgot the sugar.
I absolutely kid you not, NOBODY noticed. The end result was a bit less sweet than usual, but it was absolutely perfect. So if you’d rather skip all the sugar, here’s that sugar free banana bread recipe.
- 3 ripe bananas
- 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- Pinch of salt
Start by mashing the bananas in a large bowl. Add the oil, egg, vanilla and stir well. Then add the flour, baking soda and salt. Pour the batter into 1 regular sized loaf pan or 2 mini loaf pans. Make sure to grease your loaf pan(s) first.
Bake in a 350 F oven for about 45 minutes for mini loaves or 50-60 minutes for a full-sized loaf. The bread is done when you insert a toothpick and it comes out clean.
