Sugar-Free Banana Bread Recipe


So tonight, I decided to bake some banana bread, as I often do. Somehow, I forgot the sugar.

I absolutely kid you not, NOBODY noticed.  The end result was a bit less sweet than usual, but it was absolutely perfect. So if you’d rather skip all the sugar, here’s that sugar free banana bread recipe.

Start by mashing the bananas in a large bowl. Add the oil, egg, vanilla and stir well. Then add the flour, baking soda and salt. Pour the batter into 1 regular sized loaf pan or 2 mini loaf pans. Make sure to grease your loaf pan(s) first.


Bake in a 350 F oven for about 45 minutes for mini loaves or 50-60 minutes for a full-sized loaf. The bread is done when you insert a toothpick and it comes out clean.

    I had a similar thing happen with a pumpkin bar recipe that I made for Thanksgiving. I actually ran out of sugar and only had enough for about a quarter of what the recipe called for. It was a hit at Thanksgiving at my mothers, even the youngest kids devoured it, go figure.
